Ingredients
- 2 medium sweet potatoes, peeled and cubed
- ¼ cup unsweetened groundnut (peanut) butter
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 cup vegetable broth or water
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh parsley for garnish
Method
Sauté the Vegetables
Heat olive oil in a pan over medium heat. Sauté the onion and garlic until soft, about 5 minutes.
